The Maracay farm, tended by Luz Helena Salazar, produces a rare and meticulously processed coffee. Harvested with precision, only the ripest cherries are selected, undergoing a rigorous process to ensure exceptional quality.

After floating and hand-sorting to remove defects, the cherries undergo a unique 30-hour underwater fermentation. Following this, they are pulped, washed gently, and dried in carefully controlled conditions until reaching the ideal moisture content.

This micro-lot is a pure expression of Pink Bourbon, a mutation between red and yellow bourbon varieties. It is said that it is a mutation that took place at 2100 m.a.s.l in San Adolfo, Huila. Regardless of its origin, this Pink Bourbon's quality is a testament to nature's surprises and the meticulous care taken in its cultivation.
