Much like crafting a mythical beast, building Chimera took precision and imagination. We started by envisioning a flavor profile that was bold yet approachable, balanced yet dynamic. From there, we sought out coffees from Colombia and Brazil, known for their rich, balanced qualities that would complement each other perfectly. The result is a blend that brings together the earthy sweetness of toffee, the comforting familiarity of graham cracker, and a hint of honeyed warmth. The roast profile—medium to medium-light—was carefully chosen to allow these flavors to shine, while maintaining the complexity needed to make Chimera magical as both filter and espresso.
