After careful harvesting, the coffee undergoes meticulous sorting to remove any underripe cherries. The sorted cherries are then sealed in bags, initiating a precisely 64-hour fermentation process within a controlled temperature environment. Once fermentation is complete, the coffee beans are transferred to a spacious drying patio, where they soak up the sun's rays. To ensure uniform drying, the beans are regularly shifted throughout the day.
